Recipe: Bacon Ice tea

Hey everyone!

So now that I have some free time, I have come up with this new recipe!

Now I call it bacon ice tea, but it really has nothing to do with bacon, just a name! This recipe was made up after I had some ice tea at a restaurant, and it was gross! Way to sweet, and the tea tasted like it came from some pre-made powder (if that’s even possible!). It only takes a few minutes to make and its cheaper than buying it at the store!

Ingredients:

  • 1/2 cup fresh lemon juice
  • 3/4 cup white sugar
  • 2 tbsp loose leaf earl grey tea
  • 2 tbsp loose leaf oolong black tea
  • 5 mint leaves torn in half
  • water

Preparations:

Loose leaf tea pot

3 liter juice container

Step 1:

Boil enough water to fill the teapot, make sure the water is boiling since black tea requires very high temperatures to steep properly.

Step 2:

Steep tea in the loose leaf tea pot for 8-10 minutes

Step 3:

Mix all the ingredients together in the juice container and chill until cooled.

Step 4:

Enjoy!

Im Back!

Hey everyone!

After a tough year of finishing up my degree I finally have time to start up my blog again!

I’ve got a bunch of great recipes, reviews, and even a few new pieces of kitchen equipment that I want to share with everyone!

I’ve also got a new recipe that I will be posting tonight, so check back later!

I won’t give it away yet, but I’ll give you a few hints, tea, mint and time! Any guesses?

La fogata Latina Restaurant

Hey everyone! It has been a really long time since I have been able to post on here! School, work and everything in between have gotten in the way, but I finally found a few minutes to do a quick review! So here it is!

La Fogata Latina Restaurant

Background:

La Fogata is quite literally a hole in the wall! My kitchen is quite a bit larger than there entire restaurant! But this lack of space doesn’t stop them from making some of the best Latin food around! One thing to remember is that they are only open 11 am to 6 pm and on Friday nights they open up again at 11pm! Great place to stop by after a night out!

Ambience:

Well from a restaurant standard there really isn’t much to say, its a hole in the wall! Its cramped,hot and has only a few seats, but it makes me feel like I’m traveling through Mexico! Its not somewhere that you sit down for a meal, its somewhere that you grab a quick bite to eat on your way back to the office or your car. Overall I liked the ambience , it really suited the type of food that they serve!

Service:

The service was great! Within 2 minutes they took our order and within 10 minutes we had our food! Now it was kinda difficult to communicate with the owners since it seemed like English was a second language, so save everyone the trouble and just order something! Don’t ask a million questions!

The food:

The food, well from the lineup at 11pm and the food we got I can tell you that it is great! Here is what we ordered:

  • Chicken Arepa
  • Pork Arepa

Now when I ordered these, I had no idea what they were! I just knew that it smelled really good! They come served in a corn tortilla with, well, to be perfectly honest I can remember! All I do remember is that they left me wanting more! They were both well balanced in flavour, texture and aroma, and at around $5 a piece, they are a steal!

Conclusion:

Go order anything here and you will not be disappointed! It is a great little hole in the wall that will leave you wanting to come back again and again!

Why I Hate Eating Out!

Hey everyone!

So its time for the post about why I hate eating out so much! This dislike for eating out at restaurants first started in my first year of college in 2009. When I was younger I really enjoyed going out for dinner, but as I got older and learned how to cook for myself, I really started to appreciate food. Once I started to appreciate food I realized how many restaurants make and serve bad food. Some restaurants are just mediocre, others are just downright gross, but very few do the food justice.

When I get a bad meal, it ruins my day, but so many times I go out to a restaurant expecting to get a good meal, something that I can’t make at home. But when the meal comes and the food is slimy, or too spicy, not cooked or just plain ugly, it just enforces why I don’t really like going out to restaurants! For some reason, I still go out for dinner, I think I do this because I really want to find another great place to eat, but it has yet to happen, and at least in Victoria, I don’t think it ever will.

Now after reading this you may think that I’m some kind of restaurant hater! But im not! I am just very picky when it comes to me paying somebody else to make my food. If they can’t make food taste better than I can, they shouldn’t be serving food to people! But after many years of trying different restaurants, I have found 4 or 5 that I return too regularly. Now I won’t tell you what restaurants these are, and I will never review them, they are too special to try to critique the food, or the service. To me they should just be enjoyed, not judged.

Go out and find your favorite place to eat, It may take some time, and a bunch of bad meals in between, but you will always enjoy going back to them with your friends and family! Don’t share them with to many people, keep it to your self! This is the one thing you should be selfish about!

So today I decided to post another one of my favourite recipes, Triple chocolate brownies. It is a combination of a few of my brownie recipes that I have collected over the years, but they all had some flaws, so I decided why not combine all the best parts of the recipes! So here you go!

Ingredients:

4 sticks (1 pound) unsalted butter
2 2/3 cups semi sweet chocolate chips
3/4 cup dark unsweetened chocolate chips
1 cup white chocolate wafers
1 cup semi sweet chocolate wafers
1 1/2 cups chopped walnuts (optional)
6 extra large eggs
2 tablespoon instant coffee (optional)
2 tbsp vanilla extract
2 1/4 cups white sugar
1 1/4 cup all-purpose flour
1 tbsp baking powder
1 tsp salt

Preparations:

Preheat oven to 350 degrees F

Butter and flour a 12″ by 18″ baking pan

So im going to do a quick critique of the food, and the music! I usually don’t say much about music since this is a food site, but I loved music before I loved food!

Background:

Hermann’s jazz club is a little hole in the wall place on View street, Victoria BC. They have tons of great musicians, and have been around for years. It’s a pretty easy place to miss; up until 3 weeks ago I had never even heard of it even though I drive by it pretty regularly! One word of advice, get there early, it fills up really quick!

Quick tip: Rice

Hey everyone!

So in the past few weeks I have had a bunch of people tell me that they have never cooked rice! I was astonished at this because rice makes it into my meals at least 3 times a week! But as the weeks went on more people told me they have never cooked rice. So after explaining it a few times, I decided that I would just post it on here!

White rice

Ingredients:

1 cup white rice
2 cups liquid
Pinch of salt and pepper

Directions:

Now you may have noticed that I did not specify a liquid to cook the rice in, that’s because it’s totally up to you! You could use consommé, chicken stock, vegetable stock, or just plain water. It’s really up to you! I always try to pair it with the dish, but my overall favorite is chicken stock!

In a medium pot, combine the rice, liquid, salt and pepper together.

Cover with a tight fitting lid, and bring to a boil. As soon as it boils, turn off the heat and let it sit. The rice will slowly absorb the liquid until there is no more liquid in the pot. This usually takes around 20 minutes. Try not to open the lid so that the steam inside cooks the rice.

Once cooked, fluff with a fork and serve!

So there it is! White rice cooked in under 25 minutes!

Hermann’s jazz club

Hey everyone!

Last week I was invited to go to a jazz club in downtown Victoria by a friend of mine. I was going mainly for the music, but yet again food worked its way into the mix! So im going to do a quick critique of the food, and the music! I usually don’t say much about music since this is a food site, but I loved music before I loved food!

Background:

Hermann’s jazz club is a little hole in the wall place on View street, Victoria BC. They have tons of great musicians, and have been around for years. It’s a pretty easy place to miss; up until 3 weeks ago I had never even heard of it even though I drive by it pretty regularly! One word of advice, get there early, it fills up really quick!

Ambience:

Hermann’s is kinda double-sided when it comes to the ambience, it ranges from good to very bad in a 30 foot stretch! But I’ll start with the bad! Hermann’s is located right beside Touch nightclub; Touch is a horrible place, tons of drunks, drugs, violence and cops. When we entered Hermann’s we had no idea Touch was beside it because it wasn’t open yet, but when you leave you will notice. There are always cops outside, broken glass and drunk teens. Now I do not blame Hermann’s at all for this, but make sure you are aware when leaving at night, it’s not a great place to be alone.

Now the good! When you walk in, there is a long hallway, but you can see all the people at the other end having tons of fun while the bands are setting up. It’s a miss match of old furniture, new furniture and an old building. It has a really nice feeling, it feels like a good jazz club!

Service:

The service was passable at best, It was a seat yourself kinda place, but that’s not where the issues start to arise; it’s what happens after you order your food. Sometimes it takes a really long time to make it to the table like in my case, or it just doesn’t arrive, which was the case for some of our friends. We finally had to ask if we would be getting our food or not. But they were on top of the drinks for the most part so that was good.

The Food:

The food, well there really isn’t much to say about the food. I can’t really give a good review of the food because the head chef had just quit. But I will review what I had none-the-less. I ordered:

Yam Fries with jalapeño aioli $5.95

The yam fries were good, they were crispy, but I had the faint impression that they did not make them in-house. They were too perfect, and were very salty, so I assume that they buy them frozen and just re-fry them for service. But, the fries were tasty, except for this creation that they call jalapeño aioli. It wasn’t jalapeño aioli, it was ranch dressing. Now maybe there was some jalapeño’s in it, but I couldn’t taste them, they would have been better off with a simple roasted garlic aioli. Now I will again mention that their chef had just left, so a cook had taken over the kitchen, and I will give them another chance when they get a chef back in the kitchen, because you really could tell that a cook was running the place and not a chef.

The Music:

The music was what will bring me back to Hermann’s, it was amazing! Now when I first learned that there was a cover charge of $20, I was a little put off. I have never been to a small venue where they charge a $20 cover charge but I soon got over that when I heard the quality of the music! They had a cuban influenced band in that night and it was great! The sound was very good! It is the first time I have been to a venue like that where the sound impressed me, I think it was partly to do with the quality of the band playing, but also the guy running the sound board. I am so used to going to a concert and having my ears hurt after it’s over, but Hermann’s did not have that effect. Now after talking to some people, they mentioned that the quality of the music was always this good, every time they show up.

Conclusion:

Go for the music, not for the food! It’s a pretty clear conclusion that at that time, their emphasis was not on the food, but rather the music. I think once they get a chef back in the kitchen, they will have a great combination. Regardless of the food quality, I will go back for the music any day of the week.

Part 2: Bacon ice cream

Hey everyone!

This is part 2 of the bacon ice cream saga! A few years ago I saw a show by chef Micheal Simon that highlighted a company that specialized in candied bacon products! The one product that stood out to me was chocolate covered bacon. So here is my take on their chocolate covered bacon, and to make it even better I’ve paired it with vanilla ice cream!

Chocolate covered bacon recipe:

Ingredients:

Direction:

  1. Set up a double boiler to insulate the chocolate as you melt it. If you don’t have a true double boiler, just take a large Pyrex bowl, and place it on top of a small pot with 1″ of water. Bring the water up to a simmer, add the chocolate, and slowly melt the chocolate, make sure you don’t get any water in the chocolate or it will seize up!
  2. Once the chocolate is completely melted, dip the bacon in the chocolate and place on a piece of parchment paper.
  3. Place in the fridge and cool until the chocolate has hardened, about 10 minutes.
  4. Serve with a scoop of ice cream and enjoy!
